Scaling docs: edits to make the guides flow easier

Summary

CC @gingerwizard, as discussed, some edits to these docs.
Read through them now again and see the issue.

I've rearranged some parts to make the flow more logical, and so the section headers don't confuse the reader + a few consistency improvements.
