Server: Processing large notes in /api/items can be extremely slow and blocks the server

It seems that when trying to send a large note to the /api/items endpoint, the whole server gets stuck on that request and can take up to 3 minutes to process it, just to say at the end that it won't process it.

We need to investigate what is taking so much time.
